New Home Chore

A New Chore

I’m taking a temporary break from the Word Of The Day Challenge I started.

I’ve been assigned a task; the making of a monthly meal planner, to feed me, my older brother, and our mother. They both have a small to regular appetite, while I double it, or play the “clean up hitter,” as it were. So, the meals would have to feed the equal of 4 persons.

I pulled up a graph supplied by Microsoft Excel and found the planner template. They have example meals, but none that we could probably afford, or that I want to take the time to prep and cook.

Most of our dinners consist of Hamburger Helper dinner boxes, so we would just need the boxes and the burger to go with it. However, as each one calls for a pound of meat, I usually use 1 1/4 to 1 1/2 pound for each. What can I say? I like beef.

The thing is, we can’t have that for every single meal, so I have to find other recipes to round out the month. My Ma said she could make the plans, but as I’m the one who usually ends up doing the cooking, I would rather find foods I don’t mind (as much) to fix.

Thus, my somewhat dilemma. I need to find recipes, simple recipes, to populate the planner. As I said, a lot of them can be Hamburger Helper, so those days would be rather simple. The rest of the days would be meals made of actual ingredients I would have to combine to make a meal.

I would love to find a website that offers month-long suggestions with recipes for each. I can add or eliminate ingredients at will (example- NO ONIONS), but, as far as I can tell, I would still have to enter all necessary ingredients for the plans by hand. What a P.I.T.A.

To make things clear, I strongly dislike making plans. I am more of an impulsive-type personality. What I feel like making, I look for ingredients on hand and whip something up. I usually do pretty well “experimenting” and most times my makeshift meals are quite tasty. (Some may remember the Yeehaw’s Cottage Pie recipe I posted on Google Docs a little while back.)

Help a poor man out, would you? Post me links or, if so inclined, a recipe in the comments for our consideration.

  1. Thanks! I do love me some ground beef recipes! I get some great reviews from family with my experimentation involving hamburger.
    My Mother does like some fish, but if it has a “fishy” smell, not so much. I usually bake it.
    Veggies are used occasionally, but for convenience we usually use the canned stuff.
    As for rice, it is banned. My Mother cannot keep rice dishes down, so we prefer pastas mixed with the meals.
    (I make a mean spaghetti that always gets rave reviews. Maybe I’ll post that recipe next.)
    Oh, and onions are outlawed, too. Neither my Ma nor I care for them, but my Brother loves them. Go figure.

  2. I’ll start posting some of the ground beef recipes I use. Don’t forget to include some fish in your menu. We like ours grilled or breaded. I try to have fish at least once a week. We have breaded fish sandwiches with mac and cheese. Simple side dishes are carrot and celery sticks, applesauce, bagged salad, or macaroni and cheese. We love home fries and one tip I learned was to cook them in the microwave before frying. After they cool, we slice them up, add onion and fry. I don’t know how healthy they are, but they’ve been a favorite for 40 years.
    One quick lunch we like is Campbell’s Chunky soup. I buy 2-3 cans of one of their beef varieties. Rinse the can with about 1/2 cup water and toss into the soup. Then I throw in 1 1/2 cups of instant rice, following the cooking directions for the rice. My measurements are not precise–more like an approximation. The soup has more body and is more filling with the rice, plus I usually eat mine with some bread and butter. A salad is also nice with it.
